Today is April 15th, 2024 which means it’s that much awaited day many of us dream of all year. And when I say dream, I mean nightmares LOL. As a solopreneur, and as someone whose math side of the brain is…well is not my dominant side, taxes are a totally energy zapper.
Luckily for me, I have an awesome CPA and they got me all set up ahead of time this year. This leaves me some time today to write my first blog! Writing a blog has been on my bucket list for some time now….and today I don’t have the excuse of taxes to get in my way! If you are a writer, or simply someone who is in the process of starting something new….then you know that perfection equals paralysis! But I’m breaking out of that today…right here…right now!
I have so many ideas for things to put on here for you all, but today I’m going to start with a one that is one of my fave things to make. And it’s appropo for this time of the year as the title says….they are Power Bites! The recipe was based on the No Bake Energy bites from the awesome blog www.gimmesomeoven.com. …She has some amazing recipes. Of course sometimes I eyeball it and use more or less or different items such as collagen protein powder and so we like to call them Power Bites. I used to make these for my daughter when she was in competitive cheer in high school…they are a good source of protein, they are quick and easy to make and eat, and they are delish! They are great to make ahead and store in the fridge or even the freezer. And with summer coming up, it’s a great snack to have on hand for the kids when they come home from camp or those long pool days…or if you have a teenager…when they wake up at noon LOL.
Since she is in college now…I still get her home for those extended semester breaks and summers for now! So these are great for the college kids to have when they wake up with a cup of coffee. Or to grab and go as they are out the door to work or visit friends they haven’t seen in a while!
While these are so tasty, they are also great ways to smuggle in a little extra nutrish. I make these so often that I actually have a tray in my pantry that I keep all of the ingredients in. So when I’m ready to make a new batch, I just grab the tray, bring it into the kitchen, pull out a large bowl for mixing and a rubber spatula and just get to it. If I am making them in bulk I may separate all of the ingredients into their own bowls such as these https://shopstyle.it/l/cancm for easy access.
So I like to keep on hand old fashioned oats ….and there are GF ones that I use. I do not have a gluten allergy but I do try to avoid them when I can. I get unsweetened finely shredded coconut. You can get the sweetened for a little extra taste but I find we thought it was sweet enough without it. I always keep creamy peanut butter on hand but I also like to use sunflower butter ….any nut butter that you like that can serve as the delicious glue that holds it all together!
When you are in my pantry you will always find a bag of chocolate chips……we love them to snack on even for something little when needing to satiate that sweet tooth. You can get dairy free if that works best for you…..Either way, one thing I will say that about that is that I prefer the smaller chips to the larger ones. For me, the larger ones can sometimes be overwhelmingly sweet. Now, sneaking in the extra good for you stuff, I love ground flaxseed and chia seeds. Note…if you don’t have one or both of those on hand, you don’t need them! And the last couple of staples in this recipe to keep on hand is your choice of either honey or maple syrup and vanilla extract.
If you keep all of these in stock in your pantry, it just makes it so easy if you are looking for a sweet treat with a solid amount of protein and fiber.
1 cup old-fashioned oats or GF oats
2/3 cup finely shredded unsweetened coconut
1/2 cup creamy peanut butter (or I love sunflower butter)
1/2 cup semisweet chocolate chips
1/3 cup honey or maple syrup….or you can combine the two (for a total of 1/3)
1 scoop collagen protein powder
1 tbsp chia seeds
1 tsp vanilla extract
MIX. Stir everything together in a large mixing bowl until thoroughly combined.
ROLL. Depending on what size snacks you want, you can use a tablespoon, ice cream scoop or just your hands to grab the desired amount of mixture and roll into a ball. Then place the ball on a sheet of wax paper.
TIP: To make it a little easier to roll the mixture, cover the bowl and chill in the fridge for a couple of hours. You don’t have to do this….just note the mixture will be a bit of an ooey gooey mess…but gets it done faster!
3.)ENJOY. You can serve now! Or, you can store in sealed container. I layer in containers using wax paper as a divider so that they don’t stick together.
**Will last up to 1 week in fridge or 3 months in freezer.
Suggestion: If you are a texture girl like me and you like coconut, try rolling them in a little extra finely shredded coconut for a little something extra!
