My husband loves anything watermelon, and I love feta, so this is the perfect combo for us! The ingredients are not expensive and they don’t take up a lot of room in the fridge before prep. And once you prepare and set out on a beautiful platter or charcuterie board, they will be devoured and you won’t have to make room for left overs!
I made these for Father’s Day weekend this year. It was just the three of us so I only bought a pack of pre-sliced watermelon. There were 5 wedges in the pack and I cut up enough cubes from that to have plenty for the three of us for two nights in a row! I don’t know about you but I don’t love having to slice open a huge watermelon in the kitchen right before hosting …..it’s delicious and it is slightly less expensive to buy them whole….but they do make a bit of a mess. But you can do it either way….
I had decided to do this last minute so didn’t want to mess up the kitchen or take the time….but if I had pre-planned I certainly would have bought the whole watermelon and cubed it up in advance!
Once you have the watermelon in about inch sized cubes……you can place them in rows on a wooden carving board this way you can dress it up and keep it on here for serving…or a pretty white platter would be great as well.

If you are traveling with these you might want a long clear pyrex baking/casserole dish or with a tall cover….to keep them from sliding off or juices spilling into your car or onto your cute summer outfit!
I love to get a blocks of feta, we do greek salads here quite a bit. Usually I go for the Organic Greek Isle brand, this time I used Boarshead and it was delicious. I actually sliced the block in half so the cubes weren’t quite so thick….it’s really all what you prefer. Then I cubed up the feta in to slightly less sized cubes as the watermelon.
There is no perfection in creating these bites, just set the cubes on top of the watermelon. Have the other ingredients nearby because after this step you are almost done lol!

Grab some hot honey…any kind…we love Mike’s but this time I used Trader Joe’s. Drizzle that delicious honey over the top just enough to give it some sweet flavor and help the next ingredients stick. This also gives it a little spice….just enough to really enhance the sweet of the fresh melon.
If you can, ahead of time, chop up some fresh mint, you don’t need a whole lot. I cut a few fresh sprigs from our backyard and that was enough. You will also want to chop or crush some salted roasted pistachio nuts. I used ……
Sprinkle the mint and the crumbled pistachio’s over the top of each bite. Once that is done you just want to hit each piece with a little drizzle of the balsamic glaze. My daughter said she didn’t like balsamic glaze so you don’t have to use it if you don’t want…..but she did take a bite with it…and turns out, she loved it…..those flavors just all meld together in you mouth with the sweet, savory, spicy and tartness that make it so delicious. After I made this the first time…..I decided that on my next batch I would add a little pinch of flaky sea salt to each piece and it was so good! My husband loves to put salt on his watermelon, much to my chagrin LOL….I know people love it but I don’t! But I will say adding this little pinch of salt made this whole bite a little piece of heaven!
It’s fresh, crisp, and has all of the flavors of summer with the melon and the mint and the honey…..you really can’t go wrong! You can also you goat cheese if you prefer! It’s not messy to make and it’s not a mess to clean up!
This one is bound to be a crowd pleaser!

We always love to make a fun cocktail, so with this Todd crafted a Lavender Gin Sour. We saw our favorite online bartender make it and he claimed it was now his favorite drink…and now it’s ours. If you don’t love gin you could make it with vodka…we usually love vodka based drinks but this gin drink was so fresh, tart from the lemon, sweet from a little lavender simple syrup, and the gin just really balanced it all out! And nothing makes a drink taste better then the glass it is served in, imo! It really elevates the drink, and the experience, so we served them up in coupe glasses like we are civilized LOL.
